Candied Apple Cheesecake Recipe

Ingredients

  • 6 large Granny Smith apples, peeled and cut into ½ inch thick wedges
  • 1 2/3 cups firmly packed light brown sugar, divided
  • 1/2 cup plus 1 tablespoon butter, melted
  • 2 cups cinnamon graham cracker crumbs
  • 1/2 cup finely chopped pecans
  • 3 (8-oz.) packages cream cheese, softened
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1/4 cup apple jelly

Method

  1. Toss apple wedges with 1/3 cup brown sugar
  2. In a large skillet, saute coated apples in 1 tablespoon butter over medium-high heat until tender and golden
  3. Cool completely
  4. Preheat oven to 350F
  5. In a large bowl, combine cinnamon graham cracker crumbs, remaining butter and pecans
  6. Press into the bottom and 1 ½ inches up the sides of a 9 inch springform pan
  7. Bake 10 to 12 minutes, until lightly browned
  8. Cool completely
  9. In a large mixing bowl, beat together cream cheese, vanilla and remaining brown sugar until smooth
  10. Add eggs, one at a time until just combined
  11. Pour into crust
  12. Arrange apples in a spiral shape over batter
  13. Bake for 55 to 65 minutes, until set
  14. Cool, cover and chill overnight
  15. In a small saucepan, cook jelly with 1 teaspoon water over medium heat until melted
  16. Brush over apples on top of cheesecake
  17. Garnish suggestion – whipped topping
