Cajun Tofu Crunchies Recipe

Ingredients

Makes 6 to 8 servings

  • 1 pound extra-firm tofu, well drained, cut into 1/4-inch slices and pressed
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method

  1. Preheat the oven to 350° F
  2. Lightly oil a baking sheet and set aside
  3. Cut the tofu slices into 1/4-inch strips
  4. In a medium bowl, gently toss the tofu strips with the oil, Cajun spice blend, salt and pepper, until well coated
  5. Arrange in a single layer on the prepared baking sheet and bake until firm and nicely browned, about 45 minutes, turning once with a metal spatula about halfway through
  6. Set aside to let them cool and firm up
  7. Serve at room temperature
