Cajun-Style Tofu Recipe

Ingredients

Makes 4 servings

  • 1 pound extra-firm tofu, drained and patted dry
  • salt
  • 1 tablespoon plus 1 teaspoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1/4 cup minced green bell pepper
  • 1 tablespoon minced celery
  • 2 tablespoons minced green onion
  • 2 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 tablespoon soy sauce
  • 1 tablespoon minced fresh parsley

Method

  1. Cut the tofu into 1/2-inch thick slices and sprinkle both sides with salt and the 1 tablespoon Cajun seasoning
  2. Set aside
  3. In a small saucepan, heat 1 tablespoon of the oil over medium heat
  4. Add the bell pepper and celery
  5. Cover and cook for 5 minutes
  6. Add the green onion and garlic and cook, uncovered, 1 minute longer
  7. Stir in the tomatoes, soy sauce, parsley, the remaining 1 teaspoon Cajun spice blend and salt to taste
  8. Simmer for 10 minutes to blend the flavors and set aside
  9. In a large skillet, heat the remaining 1 tablespoon oil over medium-high heat
  10. Add the tofu and cook until browned on both sides, about 10 minutes
  11. Add the sauce and simmer 5 minutes
  12. Serve immediately
