Ingredients
Makes 4 servings
- 1 pound extra-firm tofu, drained and patted dry
- salt
- 1 tablespoon plus 1 teaspoon Cajun seasoning
- 2 tablespoons olive oil
- 1/4 cup minced green bell pepper
- 1 tablespoon minced celery
- 2 tablespoons minced green onion
- 2 garlic cloves, minced
- 1 (14.5-ounce) can diced tomatoes, drained
- 1 tablespoon soy sauce
- 1 tablespoon minced fresh parsley
Method
- Cut the tofu into 1/2-inch thick slices and sprinkle both sides with salt and the 1 tablespoon Cajun seasoning
- Set aside
- In a small saucepan, heat 1 tablespoon of the oil over medium heat
- Add the bell pepper and celery
- Cover and cook for 5 minutes
- Add the green onion and garlic and cook, uncovered, 1 minute longer
- Stir in the tomatoes, soy sauce, parsley, the remaining 1 teaspoon Cajun spice blend and salt to taste
- Simmer for 10 minutes to blend the flavors and set aside
- In a large skillet, heat the remaining 1 tablespoon oil over medium-high heat
- Add the tofu and cook until browned on both sides, about 10 minutes
- Add the sauce and simmer 5 minutes
- Serve immediately
