Cabrales Blue Cheese With Apples And Olive Oil Spanish Recipe

Ingredients

  • 1 tablespoon cider vinegar, preferably Spanish
  • 3 tablespoons Spanish extra-virgin olive oil
  • sea salt and freshly cracked black pepper to taste
  • 2 granny smith apples
  • 2 ounces cabrales (Spanish blue cheese)
  • 1 teaspoon chopped chives
  • ¼ cup marcona almonds
  • sea salt to taste

Method

  1. Prepare the dressing: Whisk together the vinegar and olive oil in a mixing bowl and season to taste with salt and pepper
  2. Core the apples with an apple corer
  3. Using a mandoline, thinly slice 1 of the apples into rings
  4. Cut the remaining apple into ¼-inch-thick sticks
  5. Divide the rings and sticks among 4 plates
  6. Crumble the cheese on top of each plate and sprinkle with chives
  7. Grate the almonds over the apples with a microplane or chop them finely with a knife and sprinkle on top
  8. Drizzle with dressing and season to taste with salt
