Ingredients
SERVES 6 – Cooker: 5- to 7-quart – Time: 3 minutes at HIGH pressure
- 3 slices bacon, chopped
- 1 medium white onion, chopped
- 1 small head green cabbage, outermost leaves removed, quartered, and cored
- 1 cup chicken broth or water
- ½ to ¾ cup creme fraiche, to taste
- salt and freshly ground black pepper
Method
- In a 5- to 7-quart pressure cooker over medium-high heat, cook the bacon, stirring, until it begins to crisp
- Add the onion and cook, stirring a few times, until it softens, about 3 minutes
- While the onion cooks, cut each cabbage quarter into 1- to 2-inch pieces
- Add to the pot and stir to combine
- Add the broth
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 3 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- Stir in the creme fraiche and season to taste with salt and pepper
- Warm for 5 minutes over low heat, uncovered
- Serve hot
