Cabbage And Bacon With Creme Fraiche Pressure Cooker Recipe

Ingredients

SERVES 6 – Cooker: 5- to 7-quart – Time: 3 minutes at HIGH pressure

  • 3 slices bacon, chopped
  • 1 medium white onion, chopped
  • 1 small head green cabbage, outermost leaves removed, quartered, and cored
  • 1 cup chicken broth or water
  • ½ to ¾ cup creme fraiche, to taste
  • salt and freshly ground black pepper

Method

  1. In a 5- to 7-quart pressure cooker over medium-high heat, cook the bacon, stirring, until it begins to crisp
  2. Add the onion and cook, stirring a few times, until it softens, about 3 minutes
  3. While the onion cooks, cut each cabbage quarter into 1- to 2-inch pieces
  4. Add to the pot and stir to combine
  5. Add the broth
  6. Close and lock the lid
  7. Set the burner heat to high
  8. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  9. Set a timer to cook for 3 minutes
  10. Remove the pot from the heat
  11. Open the cooker with the Quick Release method
  12. Be careful of the steam as you remove the lid
  13. Stir in the creme fraiche and season to taste with salt and pepper
  14. Warm for 5 minutes over low heat, uncovered
  15. Serve hot
