Butternut Apple Casserole Recipe

Ingredients

  • Serving Size : 4
  • 1 butternut squash – peeled, seeded, cubed
  • 3 apples – cored, peeled, sliced
  • 1 tablespoon lemon juice
  • 3/4 teaspoon cinnamon – ground
  • 1 tablespoon brown sugar
  • 1/2 cup apple juice

Method

  1. Preheat Oven to 350 Degrees F
  2. Combine squash and apples with lemon juice and cinnamon.
  3. Place squash-apple mixture in a one quart casserole and sprinkle with brown sugar.
  4. Pour apple juice over mixture, and cover casserole.
  5. Bake for one hour, or until squash is fork tender.
