Brown Sugar Toffee Cheesecake Bars Recipe

Ingredients

For Crust:

  • 3/4 cup butter, room temp
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 2 (8 oz) blocks cream cheese, room temp
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup toffee bits
  • 1/4 cup caramel sauce

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, combine brown sugar, flour, vanilla and butter, beating until light and fluffy
  3. Press into the bottom of a lightly greased, 9 x 13 inch pan
  4. Bake for 20 minutes, until just golden
  5. Meanwhile, in a separate large mixing bowl, beat cream cheese, brown sugar and vanilla until smooth
  6. Add in eggs until just combined
  7. Fold in toffee bits
  8. Spread evenly over crust
  9. Drizzle caramel sauce over top and swirl together with a knife
  10. Bake for 25 to 30 minutes, until set
  11. Cool, cover and chill overnight
