Ingredients
SERVES 4 to 6 as a side dish – Cooker: 5- to 7-quart – Time: 9 minutes at HIGH pressure
- 2 tablespoons extra virgin olive oil
- 1 medium white onion, finely chopped
- 2 medium carrots, chopped into ¼-inch pieces
- 2 teaspoons dried herbes de Provence
- 2½ cups chicken broth
- 1 cup dried brown lentils, picked over and rinsed
- salt and freshly ground black pepper
Method
- In a 5- to 7-quart pressure cooker, heat the oil over medium-high heat
- Add the onion and cook, stirring occasionally, until it just begins to soften, about 2 minutes; don’t let it brown
- Add the carrots, herbes de Provence, broth, and lentils and stir to combine well and coat the lentils with the oil
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 9 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- Stir and taste for salt and pepper
- The lentils should still be firm but tender
- If they are not quite tender, relock the cooker, bring back up to HIGH pressure, and cook for 1 to 2 minutes longer
