Broccoli With Black Beans Walnuts Recipe

Ingredients

Makes 4 servings

  • 4 cups small broccoli florets
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 green onions, chopped
  • 1 cup cooked or canned black beans, drained and rinsed
  • 1/3 cup chopped walnuts
  • 2 tablespoons chopped fresh parsley
  • salt and freshly ground black pepper

Method

  1. Lightly steam the broccoli until bright green, about 5 minutes
  2. In a large skillet, heat the oil over medium heat
  3. Add the broccoli and cook, stirring, until just tender, 5 to 7 minutes
  4. Stir in the garlic and green onions and cook 1 to 2 minutes longer
  5. Add the black beans, walnuts, parsley and salt and pepper to taste
  6. Cook, stirring, for another minute or two or until hot
  7. Serve immediately
