Ingredients
Makes 4 servings
- 4 cups small broccoli florets
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 green onions, chopped
- 1 cup cooked or canned black beans, drained and rinsed
- 1/3 cup chopped walnuts
- 2 tablespoons chopped fresh parsley
- salt and freshly ground black pepper
Method
- Lightly steam the broccoli until bright green, about 5 minutes
- In a large skillet, heat the oil over medium heat
- Add the broccoli and cook, stirring, until just tender, 5 to 7 minutes
- Stir in the garlic and green onions and cook 1 to 2 minutes longer
- Add the black beans, walnuts, parsley and salt and pepper to taste
- Cook, stirring, for another minute or two or until hot
- Serve immediately
