Broccoli Soup Slow Cooker

Ingredients

  • 1 pound (900 g) broccoli
  • 700 ml water
  • 1 cup (235 ml) skim milk
  • ½ cup (58 g) Cheddar cheese, cut into small cubes

Method

  1. Chop broccoli
  2. Remove any tough stalks and discard
  3. Place chopped broccoli and water (add more water to cover, if necessary) in slow cooker
  4. Cover and cook on high 1 to 2 hours
  5. Add skim milk
  6. Cook for an additional 15 minutes
  7. Stir in cheese and cook until cheese is melted into soup
  8. Yield: 5 servings
  9. Per serving: 353 g water; 135 calories (31% from fat, 28% from protein, 40% from carb)
