Broccoli Saute With Tofu Feta Recipe

Ingredients

Makes 4 servings

  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 medium red bell pepper, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 2 green onions, minced
  • 2 tablespoons capers
  • 2 tablespoons coarsely chopped fresh flat-leaf parsley
  • 2 teaspoons finely chopped fresh marjoram or 1 teaspoon dried
  • 1 tablespoon fresh lemon juice
  • salt and freshly ground black pepper
  • tofu feta

Method

  1. Steam the broccoli until bright green, about 5 minutes
  2. In a large skillet, heat the oil over medium heat
  3. Add the broccoli and cook, stirring, until just tender, about 5 minutes
  4. Add the bell pepper, garlic and green onion and cook, stirring, until just tender, about 3 minutes
  5. Add the capers, parsley, marjoram, lemon juice and salt and black pepper to taste
  6. Cook, stirring, to heat through
  7. Transfer to a shallow serving bowl and sprinkle with the tofu feta
  8. Serve immediately
