Breakfast Risotto Slow Cooker Recipe

Ingredients

  • ¼ cup (55 g) unsalted butter, melted
  • 1½ cups (345 g) arborio rice
  • 2 apples, washed, cored, and cubed
  • 1½ teaspoons cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/3 cup (75 g) brown sugar
  • 475 ml apple juice
  • 475 ml skim milk

Method

  1. Spray the inside of slow cooker with nonstick cooking spray
  2. Pour melted butter into slow cooker
  3. Add the rice to the butter and stir it around to coat it
  4. Add the apples, cinnamon, nutmeg, cloves, and brown sugar
  5. Stir in the juice and the milk
  6. Cover and cook on low 6 to 9 hours
  7. Stir before serving
  8. Yield: 6 servings
  9. Per serving: 228 g water; 269 calories (27% from fat, 7% from protein, 66% from carb)
