Breakfast Quesadillas Recipe

Ingredients

Serves 6

  • 3 tbsps. unsalted butter
  • 1/2 cup chopped onion
  • 8 oz. boneless ham, diced
  • 1 jalapeno, seeded and minced
  • 8 oz. crumbled fresh goat cheese
  • 8 oz. grated Monterey jack cheese
  • 1 tbsp chopped fresh cilantro
  • 8 large eggs
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 6 large tortillas, cooked
  • 3 tbsps. extra-virgin olive oil
  • 1 avocado, peeled, pitted and diced
  • 2 tsp lime juice plus lime wedges for garnish
  • melt 1 tbsp butter in a medium skillet over medium heat. add the onion and cook until softened and translucent, about 4-5 minutes. remove from the heat and stir in the ham.

Method

  1. In a large bowl, combine the jalapeno, goat cheese, Monterey jack and cilantro
  2. Add the onion and ham and mix to combine
  3. In a large bowl, whisk together the eggs with the salt and pepper
  4. Melt the remaining 2 tbsps butter in a large skillet over medium heat
  5. Pour in the eggs and lower the heat
  6. Stir the mixture until the eggs are soft and glossy, about 5-6 minutes
  7. Stir in the ham and cheese mixture and remove from the heat
  8. Lay out the tortillas and divide the mixture evenly among them, spooning it onto the bottom halves of the tortillas
  9. Fold the tortillas in half to cover the filling
  10. Brush a large skillet with olive oil over medium heat
  11. Place a folded quesadilla in the skillet and cook until lightly browned, about 2-3 minutes
  12. Turn and cook on the other side until lightly browned, about 2 minutes longer
  13. Repeat with the remaining quesadillas until all are heated through, adding oil as necessary
  14. Toss the avocado with the lime juice and sprinkle over quesadillas
  15. Garnish with lime wedges to serve
