Brazilian Fruit Souffle Recipe

Ingredients

  • butter-flavored cooking spray
  • 5 tbsp sugar
  • 2 bananas
  • 1 tbsp fresh lime juice
  • 1 large egg yolk
  • 3 large egg whites
  • 1 pinch salt

Method

  1. Set your oven to 400 degrees F before doing anything else and arrange a rack in the center of the oven
  2. Lightly, grease a 4 (1-C ) ramekins with cooking spray
  3. Dust each ramekin with 1/2 tablespoon of sugar
  4. Shake and roll each ramekin to coat the bottom and sides evenly
  5. In a food processor, add the bananas, egg yolk, lime juice and 2 tbsp of the sugar and pulse until smooth
  6. Transfer the pureed mixture into a large bowl
  7. In a glass bowl, add the egg whites with a pinch of salt and beat until soft peaks form
  8. Add remaining 1 tbsp of the sugar and beat until glossy and firm
  9. With a rubber spatula, fold 1/4 the whipped whites into the banana mixture
  10. Now, gently fold in the remaining whites
  11. Divide the mixture into the prepared ramekins evenly and tap them lightly on a counter top to remove the air bubble
  12. Arrange ramekins onto a baking sheet and cook in the oven for about 15 minutes
  13. Remove from the oven and serve immediately
