Braised Celery With Black Olives Recipe

Ingredients

Makes 4 servings

  • 1 pound celery
  • 2 tablespoons olive oil
  • 1/3 cup dry white wine
  • 1/3 cup vegetable broth
  • salt and freshly ground black pepper
  • 1/2 cup pitted kalamata olives, halved

Method

  1. Trim and remove the strings from the celery ribs
  2. Cut each celery rib into uniform pieces, about 1/2 inch wide by 2 inches long
  3. In a large skillet, heat the oil over medium heat
  4. Add the celery and cook, turning once, until golden brown, about 5 minutes
  5. Add the wine and broth and season with salt and pepper to taste
  6. Cover and cook on low until the celery is tender but not mushy, 10 to 12 minutes
  7. Spoon the celery into a serving bowl and sprinkle with olives
  8. Serve immediately
