Blackberry Corn Muffins Recipe

Ingredients

Servings : 12 muffins.

  • 1 cup cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch cinnamon powder
  • 1 pinch salt
  • ¾ cup applesauce
  • 1 cup coconut milk
  • ½ cup agave syrup
  • 1 teaspoon vanilla extract
  • 1 cup blackberries

Method

  1. Combine the flours with the baking powder, cinnamon, and salt
  2. Stir in the applesauce, coconut milk, agave syrup, and vanilla
  3. Fold in the blackberries then spoon the batter into your muffin pan lined with muffin papers
  4. Bake in a preheated oven at 350°F for 20-30 minutes
  5. To check that these muffins are cooked through, insert a toothpick in the center of one muffin
  6. If it comes out clean, the muffins are ready, if it comes out with traces of batter, then the muffins require a few more minutes baking
  7. Allow the muffins to cool in the pan when ready
