Ingredients
Makes 8 servings
- 1 cup forbidden black rice
- 3 cups water
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1 (13.5-ounce) can unsweetened coconut milk
Method
- In a large saucepan, bring the rice, water and salt to a boil over high heat
- Reduce heat to low and cover and simmer until tender, about 45 minutes
- Stir in the sugar and all but 1/2 cup of the coconut milk and return to a boil, then reduce heat to low and simmer, uncovered, stirring occasionally, until thick, about 30 minutes
- Remove from heat and set aside to cool to room temperature, stirring occasionally
- Divide the rice pudding evenly among 8 dessert bowls, drizzle the remaining coconut milk over the top and serve
