Ingredients
Makes 4 servings
- 1 1/2 pounds ripe yellow tomatoes, chopped
- 1 large cucumber, peeled, seeded and chopped
- 1 large yellow bell pepper, seeded and chopped
- 4 green onions, white part only
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- salt
- ground cayenne
- 1 1/2 cups cooked or 1 can black beans, drained and rinsed
- 2 tablespoons minced fresh parsley
- 1 cup toasted croutons (optional)
Method
- In a blender or food processor, combine half the tomatoes with the cucumber, bell pepper, green onions and garlic
- Process until smooth
- Add the oil and vinegar, season with salt and cayenne to taste and process until blended
- Transfer the soup to a large nonmetallic bowl and stir in the black beans and remaining tomatoes
- Cover the bowl and refrigerate for 1 to 2 hours
- Taste, adjusting seasonings if necessary
- Ladle the soup into bowls, garnish with parsley and croutons, if using and serve
