Black Gold Gazpacho Recipe

Ingredients

Makes 4 servings

  • 1 1/2 pounds ripe yellow tomatoes, chopped
  • 1 large cucumber, peeled, seeded and chopped
  • 1 large yellow bell pepper, seeded and chopped
  • 4 green onions, white part only
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • salt
  • ground cayenne
  • 1 1/2 cups cooked or 1 can black beans, drained and rinsed
  • 2 tablespoons minced fresh parsley
  • 1 cup toasted croutons (optional)

Method

  1. In a blender or food processor, combine half the tomatoes with the cucumber, bell pepper, green onions and garlic
  2. Process until smooth
  3. Add the oil and vinegar, season with salt and cayenne to taste and process until blended
  4. Transfer the soup to a large nonmetallic bowl and stir in the black beans and remaining tomatoes
  5. Cover the bowl and refrigerate for 1 to 2 hours
  6. Taste, adjusting seasonings if necessary
  7. Ladle the soup into bowls, garnish with parsley and croutons, if using and serve
