Easy Birthday Cake

Ingredients

  • Serving Size : 1
  • 2 cups sifted cake flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • 1 cup sugar
  • 3/4 cup milk
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 2 Egg whites – stiffly beaten

Method

  1. Sift flour once, measure, add baking powder and salt, and sift together three times.
  2. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy.
  3. Add flour, alternately with milk, a small amount at a time.
  4. Beat after each addition until smooth.
  5. Add flavoring.
  6. Fold in egg whites.
  7. Bake in greased pan, 8x8x2 inches, in moderate oven (350 degrees) 50 minutes.
  8. Cover cake with Seven Minute Frosting and sprinkle with Baker’s Coconut, Southern Style, tinted a delicate pink.
  9. Insert tiny pink candles into the frosted cake.
