Ingredients
SERVES 4 – Cooker: 5- to 7-quart – Time: 9 minutes at HIGH pressure
- 1 tablespoon unsalted butter
- 2 teaspoons minced peeled fresh ginger
- ½ cup chopped green onions
- 1 cup Bhutanese red rice, rinsed
- 1 (3-finger) pinch sea salt
- 1¼ cups low-sodium chicken or vegetable broth
- 1/3 cup chopped fresh cilantro
- juice of 1 lime.
Method
- In a 5-to 7-quart pressure cooker over medium-high heat, melt the butter
- Add the ginger and green onions and cook, stirring a few times, until softened, about 2 minutes
- Add the rice and stir to coat with the butter
- Add the salt and broth
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 9 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 10 minutes
- At time, if the pressure is not all released, open the valve
- Be careful of the steam as you remove the lid
- Spoon the rice into a serving bowl, stir in the cilantro and lime juice, and serve
