Better-With-Beer Turkey Sloppy Joes Pressure Cooker Recipe

Ingredients

SERVES 6 – Cooker: 5- to 7-quart – Time: 5 minutes at HIGH pressure

  • 2 tablespoons extra virgin olive oil
  • 1 large white or yellow onion, chopped into ½-inch pieces
  • 1 large yellow or red bell pepper, seeded and chopped into ½-inch pieces
  • 1 pound ground turkey breast
  • ½ pound ground turkey thigh
  • 2 to 3 cloves garlic, to taste, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dry mustard (like Colman’s)
  • 1 (6-ounce) can tomato paste
  • 3 tablespoons light brown sugar
  • 1 (12-ounce) bottle Pilsner-style beer
  • 1 tablespoon Worcestershire sauce
  • 6 soft brioche hamburger buns or 12 mini buns, split and toasted

Method

  1. In a 5- to 7-quart pressure cooker, heat the oil over medium-high heat until very hot
  2. Add the onion and bell pepper and cook, stirring a few times, until they just begin to soften, about 2 minutes
  3. Add all the ground turkey and garlic
  4. Stir to break up the meat and combine it with the vegetables
  5. Cook, stirring occasionally, until the turkey is no longer pink
  6. Stir in the chili powder, salt, pepper, and mustard and cook for just a minute or so to brown the chili
  7. Stir in the tomato paste, brown sugar, and Worcestershire
  8. Add the beer, stirring to evenly combine
  9. Close and lock the lid
  10. Set the burner heat to high
  11. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  12. Set a timer to cook for 5 minutes
  13. Remove the pot from the heat
  14. Open the cooker with the Quick Release method
  15. Be careful of the steam as you remove the lid
  16. Taste and adjust the seasonings as desired
  17. Serve spooned onto the toasted buns
