Ingredients
SERVES 6 – Cooker: 5- to 7-quart – Time: 5 minutes at HIGH pressure
- 2 tablespoons extra virgin olive oil
- 1 large white or yellow onion, chopped into ½-inch pieces
- 1 large yellow or red bell pepper, seeded and chopped into ½-inch pieces
- 1 pound ground turkey breast
- ½ pound ground turkey thigh
- 2 to 3 cloves garlic, to taste, chopped
- 2 tablespoons chili powder
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon dry mustard (like Colman’s)
- 1 (6-ounce) can tomato paste
- 3 tablespoons light brown sugar
- 1 (12-ounce) bottle Pilsner-style beer
- 1 tablespoon Worcestershire sauce
- 6 soft brioche hamburger buns or 12 mini buns, split and toasted
Method
- In a 5- to 7-quart pressure cooker, heat the oil over medium-high heat until very hot
- Add the onion and bell pepper and cook, stirring a few times, until they just begin to soften, about 2 minutes
- Add all the ground turkey and garlic
- Stir to break up the meat and combine it with the vegetables
- Cook, stirring occasionally, until the turkey is no longer pink
- Stir in the chili powder, salt, pepper, and mustard and cook for just a minute or so to brown the chili
- Stir in the tomato paste, brown sugar, and Worcestershire
- Add the beer, stirring to evenly combine
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 5 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- Taste and adjust the seasonings as desired
- Serve spooned onto the toasted buns
