Best Sweet-Bread From Portugal Portuguese Recipe

Ingredients

  • 1 lg. or 2 sm. potatoes
  • 2 tbsp. sugar
  • 1 pkg. dry yeast
  • 1/4 c. milk
  • 1 tsp. milk
  • 1 tsp. salt
  • 1/4 c. butter
  • 3 lg. eggs
  • 3/4 c. sugar
  • 4 c. flour

Method

  1. Boil potatoes until done
  2. Save 1/4 cup potato water and cool to lukewarm
  3. Mash potatoes and measure 1/2 cup; add 2 tablespoons of sugar and yeast to potato water
  4. Stir until dissolved
  5. Stir in mashed potatoes and set aside to rise
  6. Scald milk, add salt and cool to lukewarm
  7. Melt butter and cool
  8. In large bowl, beat eggs
  9. Remove 1 tablespoon of egg to use for brushing top of loaves
  10. Gradually beat in sugar; then melted butter
  11. Combine egg and yeast mixture
  12. Blend thoroughly
  13. Add 1/3 of flour and blend well
  14. Turn out dough on floured board
  15. Add rest of flour
  16. (Additional flour may be added to make soft dough)
  17. Knead until smooth
  18. Make a ball of dough and place in oiled bowl and cover with damp cloth
  19. Let rise until doubled in warm place in oiled round cake pans
  20. Let rise until double in bulk
  21. Preheat oven to 350 degrees
  22. Brush loaves with one tablespoon egg yolk (beaten)
  23. Bake 35 to 45 minutes or until done
  24. May be frozen
