Ingredients

  • 2 cups (240 g) Keto Pancake and Waffle Mix
  • 2 eggs
  • 1 cup (240 ml) water
  • 1 tablespoon (15 ml) canola, peanut, or sunflower oil

Method

  1. Spray a skillet or griddle with nonstick cooking spray and set it over medium heat
  2. Mix all the ingredients with a whisk and drop the batter by the tablespoonful onto the griddle or skillet
  3. Cook as you would regular pancakes, turning to brown lightly on each side
  4. Stir the batter between batches to prevent it from settling

Makes About 16 pancakes

  1. Each with 4 grams of carbohydrates, a trace of fiber, and 6 grams of protein
