Best-Ever Banana Bread Recipe

Ingredients

Prep Time: 10 Minutes – Start to Finish: 2 Hours 15 Minutes – Makes 1 loaf (16 slices)

  • ½ cup tapioca flour
  • ½ cup white rice flour
  • ¼ cup garbanzo and fava flour
  • ¼ cup sorghum flour
  • ½ cup potato starch
  • 1 teaspoon xanthan gum
  • ½ teaspoon guar gum
  • 1 teaspoon gluten-free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ¾ cup packed brown sugar
  • 1 cup mashed very ripe bananas (2 medium)
  • ½ cup melted ghee
  • ¼ cup gluten-free almond milk, rice milk, soymilk or regular milk
  • 1 teaspoon gluten-free vanilla
  • 2 eggs

Method

  1. 1 Heat oven to 350°F
  2. Generously spray bottom and sides of 9 x 5-inch loaf pan with cooking spray (without flour)
  3. In small bowl, stir all flours, the potato starch, both gums, baking powder, baking soda, cinnamon and salt; set aside
  4. 2 In medium bowl, beat remaining ingredients with whisk until blended
  5. Add flour mixture; stir until thoroughly mixed
  6. Pour into pan
  7. 3 Bake 30 minutes
  8. Cover with foil; bake 25 to 30 minutes longer or until toothpick inserted in center comes out almost clean
  9. Cool 5 minutes
  10. Remove loaf from pan; place on cooling rack
  11. Cool completely, about 1 hour
  12. Wrap tightly and store in refrigerator
