Ingredients
- 2 tbsps (28 g) unsalted butter
- ½ cup (75 g) chopped green bell pepper
- ¾ cup (120 g) chopped onions
- ½ cup (50 g) chopped celery
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
- ¼ teaspoon pepper
- ¼ teaspoon cayenne
- 1 cup (235 ml) water
- 280 g cubed cooked chicken breast
- 115g mushrooms, sliced
Method
- Melt butter in slow cooker set on high
- Add green pepper, onions, celery, tomatoes, pepper, cayenne, and water
- Cover and cook on high, about a half hour, while preparing remaining ingredients
- Add chicken and mushrooms
- Cover and cook on low 2 to 3 hours
- Yield: 6 servings
- Per serving: 188 g water; 138 calories (37% from fat, 46% from protein, 17% from carb)
