Ingredients
Makes 4 fajitas
- 1/2 cup chopped red onion
- 1 garlic clove, minced
- 1/2 cup beer
- 2 teaspoons fresh lime juice
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon salt
- 8 ounces seitan cut into 1/4-inch strips
- 2 tablespoons olive oil
- 1 ripe Hass avocado
- 4 (10-inch) flour tortillas, warmed
- 1/2 cup tomato salsa
Method
- In a shallow bowl, combine the onion, garlic, beer, lime juice, cilantro, crushed red pepper and salt
- Add the seitan and marinate for 4 hours or overnight in the refrigerator
- Remove the seitan from the marinade, reserving the marinade
- In a large skillet, heat the oil over medium heat
- Add the seitan and cook until browned on both sides, about 10 minutes
- Add the reserved marinade and simmer until most of the liquid is evaporated
- Pit, peel and cut the avocado into 1/2-inch slices
- To assemble the fajitas, place 1 tortilla on a work surface and top with one-quarter of the seitan strips, salsa and avocado slices
- Roll up tightly and repeat with the remaining ingredients
- Serve immediately
