Ingredients
- 1 pound (455 g) beef round roast, cubed
- 2 tbsps (15 g) low-salt onion soup mix
- 6 cups (1 4 L) low-salt beef broth
- 1 cup (130 g) sliced carrot
- 2-3 potatoes, diced
- 1 cup (120 g) Heart-Healthy Baking Mix
- 1 tablespoon (1 3 g) parsley
- 6 tbsps (90 ml) skim milk
Method
- Place meat in cooker
- Sprinkle with soup mix and then add broth and vegetables
- Cover and cook on low for 6 to 8 hours
- Combine baking mix, parsley, and milk
- Drop by teaspoonfuls onto stew
- Cover and cook on high until dumplings are done, 30 minutes to 1 hour
- Yield: 6 servings
- Per serving: 425 g water; 287 calories (11% from fat, 35% from protein, 54% from carb)
