Ingredients
- 2 tbsps (28 ml) olive oil
- 1 pound (455 g) beef round roast, cut in 1-inch (2 5 cm) cubes
- 4 potatoes, cubed
- 1 cup (130 g) sliced carrot
- 1 cup (225 g) diced beets
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
- 1½ cups (240 g) chopped onion
- 180 g coarsely chopped cabbage
- 1 tsp garlic powder
- 475 ml low-salt beef broth
Method
- Serve topped with a dollop of sour cream
- Heat oil in a large skillet over medium-high heat
- Brown meat and drain
- Combine meat and remaining ingredients in slow cooker
- Cover and cook on low 8 to 10 hours
- Yield: 8 servings
- Per serving: 375 g water; 276 calories (19% from fat, 26% from protein, 55% from carb)
