Beef Borscht Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1 pound (455 g) beef round roast, cut in 1-inch (2 5 cm) cubes
  • 4 potatoes, cubed
  • 1 cup (130 g) sliced carrot
  • 1 cup (225 g) diced beets
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
  • 1½ cups (240 g) chopped onion
  • 180 g coarsely chopped cabbage
  • 1 tsp garlic powder
  • 475 ml low-salt beef broth

Method

  1. Serve topped with a dollop of sour cream
  2. Heat oil in a large skillet over medium-high heat
  3. Brown meat and drain
  4. Combine meat and remaining ingredients in slow cooker
  5. Cover and cook on low 8 to 10 hours
  6. Yield: 8 servings
  7. Per serving: 375 g water; 276 calories (19% from fat, 26% from protein, 55% from carb)
