Ingredients
- 1½ pounds (680 g) beef round steak
- 1 tbsp (11 g) mustard
- 1 tbsp (7.5 g) chili powder
- ¼ teaspoon black pepper
- ½ teaspoon minced garlic
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
- 1 cup (160 g) chopped onion
- 512 g kidney beans
Method
- Cut steak into thin strips
- Combine mustard, chili powder, pepper, and garlic in a bowl
- Add steak and toss to coat
- Transfer to slow cooker
- Add tomatoes and onion
- Cover and cook on low 5 to 7 hours
- Stir in beans
- Cook 30 minutes longer
- Yield: 8 servings
- Per serving: 155 g water; 184 calories (16% from fat, 53% from protein, 31% from carb)
