Ingredients
- 950 ml water
- 1½ cups (290 g) dried pinto beans
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
- ¾ cup 113 g chopped green bell pepper
- ½ cup (80 g) chopped onion
- 1 tbsp (15 g) brown sugar
- ½ teaspoon minced garlic
- 1/8 teaspoon pepper
- 4 slices low-salt bacon, cooked, drained, and crumbled
Method
- In saucepan, bring water and beans to boiling; reduce heat and simmer, covered, 1½ hours
- Pour into a bowl; cover and chill
- Drain beans, reserving 1½ cups (355 ml) liquid
- Transfer beans and reserved liquid to slow cooker
- Stir in undrained tomatoes, green pepper, onion, brown sugar, garlic, and pepper
- Cover and cook on low for 12 to 14 hours
- Stir beans; top with crumbled bacon
- Yield: 6 servings
- Per serving: 255 g water; 218 calories (10% from fat, 23% from protein, 67% from carb)
