Beans And Peppers Slow Cooker Recipe

Ingredients

  • 950 ml water
  • 1½ cups (290 g) dried pinto beans
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
  • ¾ cup 113 g chopped green bell pepper
  • ½ cup (80 g) chopped onion
  • 1 tbsp (15 g) brown sugar
  • ½ teaspoon minced garlic
  • 1/8 teaspoon pepper
  • 4 slices low-salt bacon, cooked, drained, and crumbled

Method

  1. In saucepan, bring water and beans to boiling; reduce heat and simmer, covered, 1½ hours
  2. Pour into a bowl; cover and chill
  3. Drain beans, reserving 1½ cups (355 ml) liquid
  4. Transfer beans and reserved liquid to slow cooker
  5. Stir in undrained tomatoes, green pepper, onion, brown sugar, garlic, and pepper
  6. Cover and cook on low for 12 to 14 hours
  7. Stir beans; top with crumbled bacon
  8. Yield: 6 servings
  9. Per serving: 255 g water; 218 calories (10% from fat, 23% from protein, 67% from carb)
