Basic Simmered Seitan Recipe
Ingredients
Makes about 2 pounds
Seitan
- 1¾ cups wheat gluten flour (vital wheat gluten)
- 1/4 cup nutritional yeast
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon sweet paprika
- 1 tablespoon olive oil
- 3 tablespoons soy sauce
- 12/3 cups cold water Simmering Liquid
- 2 quarts water
- 1/2 cup soy sauce
- 2 garlic cloves, crushed
Method
- Make the seitan: In a food processor, combine the wheat gluten flour, nutritional yeast, salt, onion powder and paprika
- Pulse to blend
- Add the oil, soy sauce and water and process for a minute to form a dough
- Turn the mixture out onto a lightly floured work surface and knead until smooth and elastic, about 2 minutes
- Make the simmering liquid: In a large saucepan, combine the water, soy sauce and garlic
- Divide the seitan dough into 4 equal pieces and place in the simmering liquid
- Bring just to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer gently, turning occasionally, for 1 hour
- Turn off the heat and allow the seitan to cool in the liquid
- Once cool, the seitan can be used in recipes or refrigerated in the liquid in a tightly sealed container for up to a week or frozen for up to 3 months
