Basic Mashed Potatoes Recipe

Ingredients

Makes 4 to 6 servings

  • 2 pounds Yukon Gold potatoes
  • 1/2 cup plain unsweetened soy milk
  • 4 tablespoons vegan margarine
  • salt

Method

  1. Peel the potatoes, if desired and cut them into uniform chunks
  2. Transfer the potatoes to a large pot with enough salted water to cover
  3. Bring to a boil, then reduce heat to medium-low, cover and simmer until they are soft when pierced, 20 to 25 minutes
  4. In a small saucepan, heat the soy milk and margarine over medium heat until hot and the margarine is melted
  5. Drain the potatoes well, then return to the pot
  6. Mash with a potato masher or ricer
  7. Stir in the hot soy milk mixture
  8. Season with salt to taste
  9. Serve immediately
