Basic Indian Pudding Recipe

Ingredients

  • Serving Size : 6
  • 3 cups milk
  • 1/3 cup cornmeal
  • 1/4 cup sugar
  • 1/4 cup molasses
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon baking soda

Method

  1. Heat oven to 275 degrees.
  2. Heat milk in large, heavy saucepan over medium heat until bubbles appear around edge of pan.
  3. Stir cornmeal slowly into milk.
  4. Cook about 10 minutes or until thickened, stirring constantly.
  5. Remove from heat.
  6. Mix in sugar, molasses, salt, cinnamon, ginger and soda.
  7. Pour into greased 1 quart casserole.
  8. Bake 2 hours or until knife inserted in center comes out clean.
  9. Serve warm with whipped cream, if desired.
