- 1 tablespoon olive oil
- 1/2 tablespoon minced garlic
- 1/3 cup sliced green onion
- 1 teaspoon fresh thyme
- 1 cup brown jasmine rice
- 11/4 cups no-salt-added vegetable broth
- 11/2 cups water
- zest and juice of 1/2 lemon, plus 1 strip lemon rind.
- 1/2 cup finely chopped and packed fresh cilantro
- sea salt and black pepper
Method
- Set a large nonstick skillet over medium heat and add the olive oil
- Once the oil is hot, add the garlic, green onion, and thyme
- Saute for 2 to 3 minutes to flavor the oil and wilt the onions
- Add the rice and cook for another 2 minutes
- Pour in the broth and water
- Bring to a simmer, reduce the heat to low, then cover and cook for 25 minutes
- When the rice is nearly finished cooking, add the lemon rind, then cover and cook until all the water is absorbed
- Remove the skillet from the heat and let it sit covered for 6 to 8 minutes so the flavors can meld
- Remove the lemon rind and fluff the rice with a fork
- Add the lemon juice, grated lemon zest, and cilantro
- Season to taste with salt and pepper
