Barbecue Lentils Slow Cooker Recipe

Ingredients

  • 1½ cups (355 ml) water
  • 1 cup (192 g) lentils
  • ½ cup (80 g) chopped onion
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
  • 1 tablespoon (20 g) chili sauce
  • 2 tbsps (30 g) brown sugar
  • ½ teaspoon dry mustard
  • 4 slices low-salt bacon, cooked and crumbled

Method

  1. In saucepan bring water, lentils, and onion to a boil
  2. Simmer, covered, 30 minutes
  3. Transfer to slow cooker; stir in undrained tomatoes, chili sauce, brown sugar, and mustard
  4. Cover and cook on low for 8 to 10 hours
  5. Uncover; cook on high for 30 minutes
  6. Stir; top with bacon
  7. Yield: 6 servings
  8. Per serving: 159 g water; 88 calories (13% from fat, 20% from protein, 66% from carb)
