Banana-Walnut Breakfast Muffins Recipe

Ingredients

Makes 12 muffins

  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 2 tablespoons ground flax seeds
  • 2 ripe bananas, mashed
  • 1/4 cup apple juice
  • 3 tablespoons canola or grapeseed oil

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 12-cup muffin tin or line it with paper liners and set aside
  3. In a large bowl, combine the all-purpose flour, wheat flour, sugar, baking powder, baking soda, salt, walnuts and flax seed
  4. In a medium bowl, combine the bananas, apple juice and oil
  5. Mix until well blended
  6. Add the wet ingredients to the dry ingredients and stir just until the flour is moistened
  7. Do not overmix
  8. Spoon the batter into the prepared muffin tin
  9. Bake until golden brown, 20 to 25 minutes
  10. Serve warm
