Ingredients
Makes 6 servings
- 2 ripe bananas
- 1 cup plain or vanilla soy milk
- 1/2 cup sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch salt
- 2 1/2 cups cooked orzo
- 1/2 cup toasted sliced almonds
Method
- In a blender or food processor, combine the bananas, soy milk, sugar, vanilla, cinnamon and salt and blend until smooth
- Transfer the mixture to a medium saucepan and bring almost to boil over medium-high heat, stirring to dissolve the sugar
- Add the cooked orzo and simmer over low heat for 20 minutes, or until desired consistency is reached, stirring occasionally
- Set aside to cool
- Transfer the pudding to a bowl, cover and refrigerate until chilled
- Garnish with almonds
- Serve warm or cold
