Ingredients
Makes 4 to 6 servings
- 3 ripe bananas, mashed
- 2 tablespoons pure maple syrup
- 2 tablespoons sugar
- 1/3 cup plain or vanilla soy milk
- 2/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1 tablespoon vegan margarine, melted
- canola or other neutral oil, for frying
- caramel sauce, homemade or store-bought
Method
- In a large bowl, combine the bananas, maple syrup, sugar and soy milk
- Stir in the flour, cinnamon, salt and baking powder, then mix in the margarine until well blended
- In a large skillet, heat a thin layer of oil over medium-high heat
- When the oil is hot, carefully place spoonfuls of the banana mixture into the skillet
- Do not crowd
- Fry until golden brown on one side, then turn and fry the other side, about 6 to 8 minutes total
- Drain the cooked fritters on paper towels
- Arrange the fritters on dessert plates and drizzle with caramel sauce
- Serve warm
