Banana Cream Cheesecake Recipe

Ingredients

  • 20 vanilla wafer cookies, finely crushed
  • ¼ cup butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 tablespoon cornstarch
  • 3 eggs
  • 2 mashed bananas
  • ½ cup whipping cream
  • 2 teaspoon vanilla extract

Method

  1. Preheat oven to 3505F
  2. In a large bowl combine crushed cookies and butter
  3. Press into the bottom of a 9 inch springform pan
  4. Refrigerate for 30 minutes
  5. In a large mixing bowl, beat cream cheese until smooth
  6. Add in sugar and cornstarch, then one egg at a time until well blended
  7. Mix in bananas, whipping cream and vanilla
  8. Pour into crust
  9. Place pan on baking sheet and bake for 15 minutes
  10. Reduce heat to 200F and bake an additional 75 minutes, until center is almost set
  11. Cool, cover and chill overnight
  12. Garnish suggestion – whipped topping and fresh banana slices
