Ingredients
Servings : 4-6 dishes.
- 1 tablespoons flax seeds, ground
- 2 tablespoons water
- 1/4 cup sugar
- 3/4 cup soy yogurt
- 1/3 cup soy milk
- 1 teaspoon vanilla extract
- 1/3 cup agave nectar
- 1 teaspoon cinnamon
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 2 ripe bananas, mashed
- 1 pinch of salt
Method
- Grease a 9 inch round pan and turn your oven on
- Set the temperature to 350F
- In a small bowl, mix the ground seeds with water and set aside to soak
- In another bowl, mix the sugar with cinnamon and set aside
- Mix the soy yogurt with milk, vanilla extract and agave nectar
- Stir in the flax seeds then the flour, baking powder and a pinch of salt
- Mix well then fold in the mashed bananas
- Pour the batter into the pan and sprinkle the sugar mixed with cinnamon
- Bake in the preheated oven for 40-50 minutes
- Let it cool in the pan then transfer to a serving plate
