Ingredients
Servings : 12 muffins.
- 2 tablespoons ground flax seeds
- ¼ cup cold water
- 1 cup oat flour
- ¼ cup cornstarch
- ½ cup almond flour
- ½ cup sunflower seeds, ground
- 1 pinch salt
- 1 teaspoon baking powder
- ½ cup sunflower oil
- 2 ripe bananas, mashed
- ½ cup maple syrup
Method
- In a bowl, mix the ground flax seeds with the cold water and allow them to soak for 10 minutes
- Stir in the mashed bananas, sunflower oil, and maple syrup
- In a different bowl, combine the oat flour, cornstarch, almond flour, ground sunflower seeds, salt, and baking powder
- Stir in the wet ingredients and mix well
- Spoon the batter into your muffin cups and bake in a preheated oven at 350°F for 20 minutes or until golden brown and fragrant
