Ingredients
- orange roughy, 2 servings.
- 1/4 c. chopped onions
- 1 stick celery, chopped
- 1/2 c. tomatoes or tomato sauce
- 2 tbsp. lemon juice or 4 tbsp. white wine
- garlic powder.
- 1 bay leaf
Method
- Saute onion and celery
- Add tomatoes or sauce, wine or lemon juice, garlic and bay leaf
- Cook quickly for 3 minutes
- Place fillets in greased pyrex dish, season
- Cover with sauce and bake at 350 degrees for 20 minutes
- Serve over rice
