Bacon Jam Avocado And Egg Muffin Sandwiches Recipe
Ingredients
Serves 6
- 6 English muffins , halved
- 1 cup bacon jam
- 2 avocados, peeled, pitted and mashed
- 2 tbsps. lime juice
- 1/2 tsp salt
- 1 large slicing tomato, cut into 6 thin slices
- 2 tbsps. unsalted butter
- 6 large eggs
Method
- Freshly ground pepper
- Lightly toast the English muffin halves in a toaster or under a broiler
- Divide the bacon jam evenly among the 6 muffin bottoms
- Mix the avocado with the lime juice and salt
- Divide the avocado evenly among the muffins
- Place a tomato slice on top of each
- Melt the butter in a large skillet over medium heat
- Crack the eggs into the skillet and cook until the whites are set
- Turn the eggs and cook for 1-2 minutes longer, until the yolks are set (2-3 minutes longer if you prefer a less runny yolk)
- Place an egg on top of each muffin and season with freshly ground pepper
- Cover with the remaining muffin halves to serve
