Bacon Jam Avocado And Egg Muffin Sandwiches Recipe

Ingredients

Serves 6

  • 6 English muffins , halved
  • 1 cup bacon jam
  • 2 avocados, peeled, pitted and mashed
  • 2 tbsps. lime juice
  • 1/2 tsp salt
  • 1 large slicing tomato, cut into 6 thin slices
  • 2 tbsps. unsalted butter
  • 6 large eggs

Method

  1. Freshly ground pepper
  2. Lightly toast the English muffin halves in a toaster or under a broiler
  3. Divide the bacon jam evenly among the 6 muffin bottoms
  4. Mix the avocado with the lime juice and salt
  5. Divide the avocado evenly among the muffins
  6. Place a tomato slice on top of each
  7. Melt the butter in a large skillet over medium heat
  8. Crack the eggs into the skillet and cook until the whites are set
  9. Turn the eggs and cook for 1-2 minutes longer, until the yolks are set (2-3 minutes longer if you prefer a less runny yolk)
  10. Place an egg on top of each muffin and season with freshly ground pepper
  11. Cover with the remaining muffin halves to serve
