Babkas Recipe

Ingredients

  • 3/4 cup butter – soft
  • 1/2 cup sugar
  • 10 egg yolks
  • 2 packages active dry yeast
  • 1/4 cup warm water
  • 1 teaspoon salt
  • 1 tablespoon lemon rind
  • 1 cup milk – room temperature
  • 5 1/2 cups flour
  • 1 cup golden raisins
  • confectioner’s sugar

Method

  1. In large bowl, cream butter and sugar until light and fluffy
  2. Beat in yolk, one at a time, until pale and fluffy.
  3. In small bowl, soften yeast in water, beat in egg mix salt, peel, milk and yeast.
  4. Slowly beat in 5 1/2 cups of flour until a soft dough forms.
  5. Turn out on lightly floured work surface, knead 8-10 minutes, until smooth and elastic.
  6. Knead in raisins.
  7. Place in greased bowl.
  8. Grease top.
  9. Let rise 1 hour, or until doubled in bulk.
  10. Punch down, divide in half
  11. Place in 2 greased and floured 8 inch fluted pans, let rise until double in bulk(covered) Bake in 350 F oven 25-30 minutes, or until well browned.
  12. Invert on rack.
  13. Sprinkle with confectioner’s sugar.
  14. Tastes better eaten within a couple of days.
  15. Two Babkas, 10 servings each.
