Ingredients
Makes 4 wraps
- 2 tablespoons olive oil
- 8 ounces tempeh bacon
- 4 (10-inch) soft flour tortillas or lavash flat bread
- 1/4 cup vegan mayonnaise
- 4 large lettuce leaves
- 2 ripe Hass avocados, pitted, peeled and cut into 1/4-inch slices
- 1 large ripe tomato, cut into 1/4-inch slices
Method
- In a large skillet, heat the oil over medium heat
- Add the tempeh bacon and cook until browned on both sides, about 8 minutes
- Remove from the heat and set aside
- Place 1 tortilla on a work surface
- Spread with some of the mayonnaise and one-fourth of the lettuce and tomatoes
- Pit, peel and thinly slice the avocado and place the slices on top of the tomato
- Add the reserved tempeh bacon and roll up tightly
- Repeat with remaining ingredients and serve
