Ingredients
- 2 med. onions, chopped
- 2 cloves garlic, minced
- 2 potatoes, diced
- 2-3 carrots, diced
- 1/2 head cabbage, chopped
- bunch of kale, chopped.
- 3/4 lb. linguica, sliced
- 16 oz. can white kidney beans
- 30 oz. can pastene ground peeled tomatoes
- 46 oz. can chicken broth
- salt & pepper to taste.
Method
- Saute onion and garlic in olive oil
- Add diced potatoes, cabbage, carrots and half of the can of chicken broth
- Cook until almost tender
- Then add linguica and kale, the rest of the broth and the canned tomatoes
- Simmer 10-15 minutes
- Season to taste
