Ingredients
- 3 pounds (1.3 kg) pork loin roast
- ½ cup (120 ml) low-salt soy sauce
- ½ cup (120 ml) sherry
- ½ teaspoon minced garlic
- 1 tbsp (9 g) dry mustard
- 1 tsp ground ginger
- 1 tsp thyme
Method
- Place the pork roast in a resealable plastic bag; set in a deep bowl
- Thoroughly blend together the soy sauce, sherry, garlic, mustard, ginger, and thyme
- Pour marinade over meat in bag; close bag
- Place the roast in the refrigerator and marinate for 2 to 3 hours or overnight
- Transfer the pork roast and marinade to a slow cooker
- Cover and cook on high for 3½ to 4 hours
- Lift roast out onto a cutting board; let stand for 10 minutes before slicing
- Yield: 8 servings
- Per serving: 147 g water; 253 calories (29% from fat, 65% from protein, 7% from carb)
