Ingredients
- boneless skinless chicken breasts, cubed
- 1 cup (130 g) diced carrots
- ¼ cup (40 g) chopped onion
- ½ cup (120 ml) low-salt soy sauce
- ¼ cup (60 ml) rice vinegar
- ¼ cup (30 g) sesame seeds
- 1 tbsp (5.5 g) ground ginger
- 1 tsp sesame oil
- 1 cup (71 g) broccoli
- 1 cup (100 g) cauliflower
Method
- Combine all ingredients except broccoli and cauliflower in slow cooker
- Cover and cook on low 3 to 5 hours
- Stir in broccoli and cauliflower and cook 1 hour more
- Yield: 6 servings
- Per serving: 135 g water; 157 calories (28% from fat, 50% from protein, 22% from carb)
Serve over brown rice
