Artichoke Green Bean Bake Recipe

Ingredients

Makes 6 servings

  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red bell pepper
  • 4 garlic cloves, minced
  • 8 ounces white mushrooms, lightly rinsed, patted dry and thinly sliced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 3 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (15-ounce) can artichoke hearts, drained and thinly sliced
  • 1/2 cup vegan Parmesan or Parmasio
  • 1/3 cup dry bread crumbs

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 2-quart casserole
  3. Steam the green beans until tender, about 8 minutes
  4. Transfer to a large bowl and set aside
  5. In a large skillet, heat the oil over medium heat
  6. Add the onion, celery and bell pepper
  7. Cover and cook until softened, about 5 minutes
  8. Add the garlic, mushrooms, basil and oregano and continue to cook, uncovered, for another 3 minutes
  9. Stir in the flour and cook 1 more minute
  10. Add the vegetable broth and cook, stirring, until thickened
  11. Reduce heat to low and simmer an additional 5 minutes
  12. Stir in the salt to taste and black pepper and set aside
  13. Add the artichoke hearts to the steamed green beans
  14. Add the mushroom mixture and all but 1tablespoon of the Parmesan and stir to combine
  15. Spread the mixture evenly in the prepared casserole
  16. Sprinkle with the bread crumbs and the remaining 1 tablespoon of Parmesan
  17. Bake until heated through, about 20 minutes
  18. Serve immediately
