Apricot Chile Dipping Sauce Recipe

Ingredients

Makes about 1 cup

  • 4 dried apricots
  • 1/2 cup white grape juice or apple juice
  • 1/2 teaspoon Asian chili paste
  • 1/2 teaspoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

Method

  1. In a small saucepan, combine the apricots and grape juice and heat just to a boil
  2. Remove from the heat and set aside for 10 minutes to allow the apricots to soften
  3. Transfer the apricot mixture to a blender or food processor and process until smooth
  4. Add the chili paste, ginger, soy sauce and vinegar and process until smooth
  5. Taste, adjusting seasonings if necessary
  6. Transfer to a small bowl
  7. If not using right away, cover and refrigerate until needed
  8. Properly stored, the sauce will keep for 2 to 3 days
