Ingredients
Makes about 1 cup
- 4 dried apricots
- 1/2 cup white grape juice or apple juice
- 1/2 teaspoon Asian chili paste
- 1/2 teaspoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
Method
- In a small saucepan, combine the apricots and grape juice and heat just to a boil
- Remove from the heat and set aside for 10 minutes to allow the apricots to soften
- Transfer the apricot mixture to a blender or food processor and process until smooth
- Add the chili paste, ginger, soy sauce and vinegar and process until smooth
- Taste, adjusting seasonings if necessary
- Transfer to a small bowl
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
